lately in my kitchen...




~I've discovered the amazing aroma of fennel seeds and never looked back.



~ I've been using the two different kinds of basil I have in a pot.

 



~ I've been cooking lots of vegetable stews (veggies courtesy of my dad's produce).



~ I've been adding cherry tomatoes to almost every dish I've made. 




~ I've been chopping/  boiling /canning / freezing almost every day.

 







~ I've been baking and freezing muffins (in an attempt not to eat a whole batch in two days!)

 


~ And... I have no idea how many tomatoes I've washed, chopped, boiled, canned/ put in the freezer... All I know is that there are now 90 jars (big ones) at my dad's, twelve freezer bags ( quantity for one stew each) in my freezer and fifteen bags in my friend's freezer! And there's more to come!

Could you please give me the recipe for the stew with aubergines? It looks as if it would make an awesome pasta sauce. I cook pasta for my folks every Saturday and they love a tomato-based sauce with a lot of vegetables.

It gives one a lovely sense of satisfaction to put up stores for the winter especially if the contents are home grown doesn't it? Harking back to olden times when if we didn't store and preserve summer's bounty we'd have gone hungry in the winter months I guess.

My goodness, you have been busy:-)
I add cherry tomatoes to almost everything I cook, too, and love using herbs from the garden - basil, mint, rosemary, oregano, thyme - wonderful scents!

wow, those photos have got me drooling, so much nice food! I've been pretty slack this year on the preseving/canning! Ive got a mega glut of apples and courgettes coming on so I need to get my act together..I love home made chutney! Such a good idea to freeze and bottle up produce for the less productive months, sounds like you wont be short of veeggies in the winter!Thanks for visiting my blog, good to "meet" you" x

You have been a busy lady and it all looks so good. Nothing better than cooking with fresh from the garden produce, IMO. How wonderful to be able to enjoy it all through the winter too.
